In Spanish, El Sauce means The Willow, but it's no mistake that the play on interlingual words has been used to describe the flavor complexities that this coffee exhibits. Our tasting team picks up on a notes of concord grape that vary from juicy to jammy depending on the brew method, that can lead to a mellow winey drying feeling combined with the sweetness of a vanilla cremé wafer, taking us back to lunchbox days of peanut butter and jellies with crisp cookies. This coffee is sourced from our friends and partners at Coffee Quest from a Communal Lot in Quilanga, Loja, Ecuador. The community of coffee producers are from the sub-region of Quilanga, known as El Sauce. This coffee comes lots that vary in altitude from 1,700 to 2,100 meters above sea level. It is comprised of a handful of varietals, primarily Typica and Bourbon, secondarily Pacas, San Salvador, and Catimor. The producers generally follow a very similar fermentation and drying process: 24 hours de-pulped and dry fermented, followed by 10-12 days drying, depending on the weather.
